Healthy Banana Bread Recipe | Gluten Free, Paleo & Sugar Free


This banana bread will change your life. 

I'm not even joking, I think I've miraculously become a genius and literally devised the perfect banana bread in existence. Like, ever.

That's how confident I am that you're going to like this. Heck, not even like- you're going to fall head over heels for it and want to keep making it time and time again. You might even notice yourself secretly encouraging your bananas to turn brown JUST so you can whip out this recipe. It's okay, just remember you're not alone. 




When I was first introduced into the world of gluten free baking (because let's be honest, gluten-free flour doesn't cut it) I stumbled across the mixture of Almond Meal and Coconut Flour and haven't looked back. These two 'flours' work in perfect harmony with each other and compliment the bread very nicely, while giving it a subtle nutty, coconut flavour. 

Now, because this is sugar free, it's very important that the bananas you use in this recipe are very ripe, otherwise you're not going to be happy with the lack of sweetness and you're going to want to start doubling up your honey intake!

Healthy Banana Bread | Gluten Free, Paleo & Sugar Free

Ingredients:

1/2 cup Almond Meal
1/2 cup Coconut Flour
1/2 tsp Cinnamon
1/4 tsp All-Spice
1 tsp Baking Soda
1/4 tsp Himalayan Salt
1/3 cup butter (Paleo's sub for Coconut Oil or Ghee)
1/4 cup of honey (Agave, Maple Syrup or Brown Sugar)
4 Eggs
1 tsp Vanilla Extract
3-4 Mashed Bananas

Optional:
1/2 cup of crushed Walnuts
1/2 cup of Organic Shredded Coconut


Method:

1. Preheat oven to 150C and line and grease a bread tin with baking paper.

2. Add all the dry ingredients into one bowl and whisk together to distribute evenly.

3. Using an electric mixer whiz together the butter, sugar vanilla and eggs. Once mixed slowly add in the 'flour' mixture little by little, mixing in between.

4. Fold in the banana mixture and the walnut/ coconut mix ins.

5. Transfer into the bread tin and bake for 1hr on 150C.

I baked mine for 30mins with a piece of aluminium foil covering the top and then took it off for the last half hour to brown on the top. To keep my bread from drying out, I baked it on the middle shelf of the oven and filled a tray with water on the bottom shelf to make sure the bread stayed moist.

That's pretty much it! I like to eat this for breakfast and toast it under the grill for a bit, butter is optional but I prefer it without! 

Best part is, it's completely guilt free and you don't have to feel bad about eating it at any time of the day- and I most definitely want to try making these as on-the-go little breakfast muffins next!

  2. That looks soooo darn good! I personally hate bananas, can't stand the smell but my husband loves that bloody thing. LOL! I usually bake banana bread for him too so I am looking forward to try this recipe on the weekend. Thank you so much for the recipe!
